I've been on a posting kick lately. Let's see how many posts I can squeeze in on one day.
Today's lunch was a little bit spicy, cheesy and saucy all at the same time. Follow all of that up with a big 'ole glass of water and you have a happy girl.
On to the Smart & Delicious Green Onion Low Carb High Fiber Tortilla went a light spreading of pizza sauce, a sprinkle of Athenos Sundried Tomato and Basil Feta Cheese, a chopped Jalapeno stuffed Green Olive, Roasted Tomatoes, and a light spread of Otria Southwestern Hummus. Place it on your skillet over medium heat and let that baby heat up for about 5 minutes on each side. It gets all melty and ooey gooey like.
What did you have for lunch today?
My lunch: leftover cheap-o mac & cheese with some ground beef in it. I'm broke. :) Some salt, pepper, garlic, and steak seasoning helped it out a bit, though! Yesterday's lunch was a cup of ramen, which, though I actually don't mind eating ramen, really left me just about as hungry after lunch as I was before it. Oh well.
ReplyDeleteNow what's really yummy is my *authentic* Japanese ramen! That stuff is soooo good! Not cheap, though, as it requires a trip to the asian market for thin-sliced beef & narutos, a trip to Schnucks for shitake mushrooms, and another trip to Dierbergs for those little asian bean sprouts. I could get all that at the asian market, but the one I go to doesn't sell the mushrooms or bean sprouts in family-of-two quantities.
