A few hours after breakfast comes lunch!
Today I was feeling like a veggie samich so I stopped by the store on my way home from yoga and picked up a few ingredients and then I made one.
On to the Peppridge Farm Whole Grain Oatmeal bread went a light spread of Otria Hummus Veggie Dip - Southwestern Spice flavored, a few roasted red peppers, roasted tomatoes, thinly sliced avocado {which, unfortunately wasn't quite ripe}, chopped romaine lettuce heart, and a sprinkling of Athenos Feta Cheese - Tomato & Basil flavored {my favorite but you can skip the cheese and make it vegan}!
Natalie kindly shared some of her pear with me. Sweet girl!
When she cut it in half she said it looked like a droopy eyed bird. I can see that!
What did you have for lunch today?
It looks like an owl to me! No lunch for me. Least favorite meal, so I eat my breakfast late! I know, I know, that's really bad, but it's how I roll!

ReplyDeleteToday I had turkey, tomatoes, arugula on a 100 calorie whole grain sandwich thin, and a giant bowl or strawberries!
So yummy...loving the roasted tomatoes, roasted peppers and avocado combo! And I need to check out the PF oatmeal bread.....mmmmmmm. I had smoked salmon on 7 grain bread...not too exciting :)
ReplyDeleteI love your healthy veggie sandwich! I'm not vegetarian, but I really like light lunch like this. Roasted bell peppers are my favorite (I buy one from Trader Joes not homemade though)!! What did I eat? Grilled cheese sandwich - I used panini press to make it - along with nutella sandwich. They are kids' favorite so I eat at least this once a week...
