Cookie Bars - Secret Recipe Club


Well, hello there.  Gosh, I haven't seen you guys since the day before Thanksgiving!  Did you miss me?  I've been contemplating as to why I haven't blogged since then and I came up with a thought that sounds just about right.  We celebrated Thanksgiving this year not once but twice!  I was stuffed to the gills for an entire week.  The only reason I am in the kitchen today is because I had to blog my Secret Recipe Club recipe and to be honest with you I haven't missed my kitchen at all.  In fact, it's been quite the opposite, really.  I haven't really spent much time in my kitchen baking or cooking anything.  I slip in occasionally for my morning coffee and a granola bar.  Maybe I'll pop a frozen pizza in the oven but other than that it's been fend for yourself or starve around here.  Deelicious Sweets has not been the place to live if you have been hungry!

Back to the Secret Recipe Club.  This month I was assigned to Pictures of all my Princesses brought to us by the beautiful Jules!  She's a stay-at-home mom and she home-schools her three girls so you can only imagine she's a pretty busy lady as it is.  Add baking and cooking to the list and you have a Domestic Goddess!  I was pretty excited when I came across her Chocolate Chip Cookie Bars.  I had all of the ingredients on hand and it was a simple recipe to whip up.  What a perfect recipe to bring me back to my kitchen.  With that said, I whipped up the recipe, put it in the oven and after 30 minutes the timer went off.  I jumped up from this blog post here that I'm currently writing and pulled the pan out of the oven to let it begin to cool.  I was sitting here admiring my "first" recipe back to the kitchen and it popped in my head that I forgot an ingredient.  Shit!  Oh, excuse me.  The recipe calls for brown sugar and white sugar.  I forgot the white sugar.  I even went over and pulled the lid off of the white sugar and for some reason didn't use it.  However, I'm not going to throw out the whole pan.  No sir, not until I try it to see if maybe it just might be okay.  I cut a bitty piece, place in on my saucer and muster up the courage to take a bite.  Hmmmm, not bad, in fact, it's pretty damn tasty!  So, I say to myself "SCORE!"  The less sugar the better, right?  No worries though, I will post the recipe like Jules meant for you to make it.  It's your call whether or not you leave out the sugar.  It will be our secret!

Cookie Bars
Yield: 24 bars

Instructions:
  • 2 1/8 cup all purpose-flour
  • 1 t. baking soda
  • 1 t. salt
  • 12 T. butter, melted
  • 1 cup packed brown sugar
  • 1 T. vanilla extract
  • 1 egg and 1 egg yolk, large
  • 1 cup sweetened coconut
  • 1 cup macadamia nuts
Instructions:
  1. Cream the butter. Next beat in the brown sugar. Then add the eggs and vanilla.
  2. Combine the flour, baking soda, and salt. Beat into the butter mixture.
  3. When combined beat in the remaining ingredients. Dump into a 11x13 casserole dish and spread out so it's even. Bake at 375 for 20 - 25 minutes.

    These look delicious...even better without the extra sugar.  All of your modifications look wonderful!

  5. Mmm, you know how much I love coconut. These look great girl. I could just reach in and snatch one or ten. I get like that sometimes, just in no mood to cook. I think we all go through that, particularly after a holiday where we've cooked up a storm.

  6. I was just thinking of chocolate chip coconut bars too.  I have a coconut loving friend who would go crazy for them.
