Pumpkin Birthday Pie


 My son turned 13 on Saturday.  


How does my little one go from this little bundle of joy,


To this handsome polite young man?

He requested pumpkin pie rather than a birthday cake.  Who am I refuse those big blue eyes and freckles?


Pumpkin Pie
Yield: 8 servings

Ingredients:
  • 1 cup white sugar
  • 1/2 t. salt
  • 1/2 t. ground cinnamon
  • 1/2 t. ground nutmeg
  • 1/2 t. ground ginger
  • 1/2 t. ground allspice
  • 1/2 t. ground cloves
  • 1 1/2 cups pumpkin puree
  • 1 2/3 cups evaporated milk
  • 2 eggs
  • 1 (10-inch) unbaked pie crust
Instructions:
  1. Preheat oven to 425 degrees F (220 degrees C).
  2. Combine the sugar, salt, cinnamon, nutmeg, ginger, allspice, cloves, pumpkin puree, evaporated milk and eggs; blending until smooth. Pour batter into the prepared unbaked pie shell.
  3. Bake at 425 degrees F (220 degrees C) for 15 minutes then lower oven temperature to 350 degrees F (175 degrees C). Continue to bake for about another 40 minutes or until pie is firm.

Dee....how could he be 13?  He was just born!!!  (Time flies so fast, doesn't it?  I think I feel my age more on my kids birthdays than my own!).  Having an October birthday, I've opted for pumpkin pie over cake in the past as well!  GREAT choice!  It looks awesome....and such a perfect crust!

    Happy birthday to your son!  He does have a discerning palate to be requesting something out of the standard cake.  After seeing that slice, I can now understand why he chose it.
