Persimmon Muffins (vegan)

Are you ready for Halloween?

Are you going to dress up?  Are you dressing up as something sexy or will you take the traditional route and be something scary?

My hubby is going as something sexy.  What is your hubby going as?

Maybe I'll take pictures and share his sexiness with you!

Persimmon Muffins - Vegan
Yield: 12 muffins

  • 3/4 cup organic cane sugar
  • 2 T. oil
  • 1/4 t. lemon extract
  • 1 cup persimmon pulp
  • 1 cup whole wheat pastry flour
  • 1 t. baking soda
  • 1 t. baking powder
  • 1/2 t. cinnamon
  • 1/2 t. nutmeg
  • 1 cup chopped walnuts
  • 1/2 cup raisins
  1. Combine sugar, oil, lemon extract and persimmon pulp in a mixer and mix until smooth consistency.
  2. In a separate bowl, combine the dry ingredients - flour, baking soda, baking powder, salt, cinnamon and nutmeg.
  3. Mix in the dry ingredients with the wet until just combined.
  4. Fold in the walnuts and raisins.
  5. Fill your muffin cups half way and bake for 20 minutes or until a knife inserted into the middle of a muffin comes out clean.
Cooks Note:  Batter will be thick. These muffins don't get much of a rise. They are dense so be careful not to over bake.

  1. Muffins looks good.

    Not ready for Halloween yet.

  2. @Christine's Pantry Thanks Christine! Better get ready for Halloween! It's right around the corner :)

  3. LOL your husband is going as something sexy? My husband would NEVER do that, hahahaha. I'm not sure what I'm doing yet! PS I love love love persimmons. I'm going to grow a tree when I settle down permanently =)

  4. I think persimmon sounds so elegant. I wonder if eating persimmon muffins in yoga pants would balance things out?

  5. Love the rustic looking muffins. I have never eaten a persimmon, so I do need to seek these out at the grocers.
I live in such a remote area, my halloween with my hubby is a bit more cozy than most. However, the remoteness can be scary at times with the wild creatures running around here!

  6. @movita beaucoup Yoga pants balance the world out. What would we ever do without them? Go naked.

  7. Nice looking muffins.
Nah we don't really dress up. I do have my favorite halloween shirt and a beautiful apron that my daughter just found me for halloween, so that will probably be my attire for shelling out candy. The hubby hides in the livingroom unless I call that there is a really cute little one coming to the door.

I can't wait to see what your husband decides to dress up as, ha! These muffins sound divine. I'm still in shock that October is almost over, and that Halloween is basically this weekend. Crazy! x

  9. Yum. These muffins sound scrumptious! I love that they're vegan.

  10. Luke tried it as a fruit and he wasn't to fond of it. He prefers it muffin style, LOL!

  11. Thanks!
I should really wear aprons more often.  My hubby gets on to me when I make a mess and have to change.

  12. I know!  It doesn't seem like there was much of an October.

  13. Thanks Tina! They are very similar to pumpkin.
Wild creatures!  That would be spooky!

  14. I have about 30 bags of persimmon pulp!  I'll get tired of it soon and send it all to you :)  No need to grow a tree.

  15. Thank you! They were Martha Stewart muffin papers.

  16. Oh my gosh, I love those muffin papers...so cute!! :) The muffins sound great - love persimmons.

  17. My mom used to say persimmon  has lots of nutritional values and she forced me to eat it in this time of year.  Now I enjoys them very much, but I see my kids not eating it as fruit.  Muffins are a great way to introduce persimmons!  Looks delicious!

Comments make me smile! Thank you for your love :)
