Persimmon Muffins - Vegan
Yield: 12 muffins
Ingredients:

Yield: 12 muffins
Ingredients:
- 3/4 cup organic cane sugar
- 2 T. oil
- 1/4 t. lemon extract
- 1 cup persimmon pulp
- 1 cup whole wheat pastry flour
- 1 t. baking soda
- 1 t. baking powder
- 1/2 t. cinnamon
- 1/2 t. nutmeg
- 1 cup chopped walnuts
- 1/2 cup raisins
- Combine sugar, oil, lemon extract and persimmon pulp in a mixer and mix until smooth consistency.
- In a separate bowl, combine the dry ingredients - flour, baking soda, baking powder, salt, cinnamon and nutmeg.
- Mix in the dry ingredients with the wet until just combined.
- Fold in the walnuts and raisins.
- Fill your muffin cups half way and bake for 20 minutes or until a knife inserted into the middle of a muffin comes out clean.

ReplyDeleteI live in such a remote area, my halloween with my hubby is a bit more cozy than most. However, the remoteness can be scary at times with the wild creatures running around here!

ReplyDeleteNah we don't really dress up. I do have my favorite halloween shirt and a beautiful apron that my daughter just found me for halloween, so that will probably be my attire for shelling out candy. The hubby hides in the livingroom unless I call that there is a really cute little one coming to the door.
I can't wait to see what your husband decides to dress up as, ha! These muffins sound divine. I'm still in shock that October is almost over, and that Halloween is basically this weekend. Crazy! x

ReplyDeleteMy mom used to say persimmon has lots of nutritional values and she forced me to eat it in this time of year. Now I enjoys them very much, but I see my kids not eating it as fruit. Muffins are a great way to introduce persimmons! Looks delicious!
