Coffee Toffee Rolo Ice Cream


We received an ice cream maker for a wedding gift 15 years ago.  I have used it a total of three times.  I'm just not really into making ice cream.  Why you ask?  Because Ben and Jerry's rock's the house when it comes to ice cream!  Can I get an "I'm not worthy" for their Coffee Heath Bar Crunch!  One of our absolute favorite flavors of all time.  Hands. Down.

So, when it came time to pull out the ice cream maker and make some ice cream, Natalie and I decided imitation is the sincerest form of flattery.  Besides, originality is nothing but judicious imitation of the greatest ice cream makers of all time!

Coffee Toffee Rolo Ice Cream
Yield: about 6 quarts

Ingredients:
  • 2 quarts half & half
  • 1 quart heavy whipping cream
  • 12 egg yolks
  • 4 cups sugar
  • 1 cup strong coffee, chilled
  • 1 (12-ounce) bag miniature chocolate-covered toffee bars, unwrapped and chopped
  • 1 (5.3 ounce) bag of rolos, chopped
Instructions:
  1. In a large Dutch oven, combine half-and-half and cream; cook over medium heat until mixture almost simmers. Remove from heat.
  2. In a large bowl, whisk together egg yolks and sugar. Gradually pour one-fourth of hot half-and-half mixture over egg yolk mixture, whisking constantly. Pour egg yolk mixture into hot half-and-half mixture, whisking constantly. Cook over medium heat, for 15 to 20 minutes, or until thickened, and mixture coats the back of a spoon. Cover, and chill for at least 4 hours. Stir in coffee, toffee bars and rolos.
  3. Pour mixture into container of an electric ice cream freezer. Freeze according to manufacturer's instructions. Spoon ice cream into a freezer-safe container, and freeze for at least 4 hours for a firmer texture.

Total Fat:  15.2 g
Cholesterol:  93 mg.
Sodium:  55 mg.
Protein:  2.5 g.

Not to mention, it brings happy faces like this one!

  1. Hey Dee... This looks amazing. Funny, with the temps hitting 100 plus last week, we are all making ice cream. But adding Rollos is GENIUS!

  12. Holy Moly for Coffee Toffee ice cream! This looks sensational! This HAS to be better than Ben and Jerry's, no? I DO love Ben and Jerry's. But one time Hagen Daz had a limited time only...Sticky Toffee Pudding ice cream that I couldn't get enough of! I can't wait to see what your next ice cream will be! : )

  19. There's just something about coffee ice cream lately that makes me craving and craving for them again and again. First thing I'm back from my holiday, I'm gonna get me a mean ice cream machine and someone or 2 very very happy just like your little gal, Dee. Uhmmmyum...!

  20. I think my ice cream machine has had about 6 sojourns and is waiting patiently for Summer to come around again here in Australia. My all time favourite (and most successful) flavour combination is Cinnamon,Roasted Almond & Rum. One scoop is all you need for an incredible decadent dessert. But I love the sound of yours.
