Cheesecake Brownies


Yesterday I had a craving for chocolate in a bad way! I needed something chocolaty, stat! I just so happened to have a box of Tastefully Simple's Truffle Brownies in my pantry and since I am pantry foraging this week what could be more perfect than that!  Yes, I killed two birds with one stone.  I know you're thinking how could I turn on my oven in this heat.  If you had a chocolate craving this bad, you would have too.  I bribed Natalie into being the baker so all I had to do was supervise.  This homeschool year I plan on getting both kids into the kitchen a lot more often.  It's something they both like to do so I don't think it will be to much of a struggle.  As long as it's one on one!


Cheesecake Brownies

For the brownies
Brownie mix or make your own


For the cheesecake
8 ounces cream cheese, well softened
1/3 cup sugar
1 large egg yolk
1/4 teaspoon pure vanilla extract

Make brownie batter
Put oven rack in middle position and preheat oven to 350°F. Butter an 8-inch square baking pan.

Make cheesecake batter and bake brownies 
Whisk together cheesecake batter ingredients in a small bowl until smooth. Dollop over brownie batter, then swirl in with a knife or spatula.

Bake until edges are slightly puffed and center is just set, about 35 minutes.

Serve warm or at room temperature. I keep mine in the fridge.

  10. Oh my, this looks so good. Your daughter is a cutie patootie too. I tend to go to brownies when I get a craving. Although with the heat this week I caved and ate a chocolate bar. Saved the house and I wasn't cranky. lol
