Applesauce Pancakes
Yields 6 to 8 servings
2 cups all-purpose flour
1/4 cup dark brown sugar
2 tablespoons baking powder
1 teaspoon salt
2 eggs
1 cup milk or rice milk for a vegan version
1/2 cup applesauce
1/4 cup melted butter
In a bowl, combine the flour, sugar, baking powder and salt. Combine eggs, milk, applesauce, and butter; add to dry ingredients and mix well. Pour about 1/3 cup of batter onto a lightly greased hot griddle. Turn when bubbles form on top; cook until second side is golden brown. Keep warm while making the remaining pancakes.

Confession: I may lose my foodie license for this confession. I heat up 100% real maple syrup for the hubby and I use Mrs. Butterworth. He has threatened to post this information on my facebook fan page. I spoke with my publicist and she informed me that I needed to be the one to put this very private information out there first. ReplyDeleteThese look so yummy. My hubby and son look at my daughter and I like aliens when we do our pancakes. As they pour on syrup, me and Kiana spread butter on ours then sprinkle them with sugar. My Mom used to do it. Don't know where the idea came from but it's the only way I'll eat them.

Oh what heavenly stacks! I use straight maple syrup but my sons love Aunt Jemima light! I never put applesauce in pancakes before but I bet they are super light! : )

ReplyDeletelol! That is like my house only switched :) I use 100% Maple Syrup and my husband prefers Mrs. Butterworth. Applesauce in pancakes is such a great idea! Love to sneak in more fruit when I can.
