Sweet and Sour Home Projects

What a busy weekend.  We have been working on our house the past few days.  Just little things that have gone for years unfinished.  Those little things add up in a hurry though.  Next thing you know, you find yourself working for days and days and fast food and pizza are your steady diet followed by bloated bellies.

Now I am thinking about redecorating.  This blog inspires me: Young House Love.  I know, this is a foodie blog!  But, my other passion is decorating.  Nevertheless, I am happy to be back in my kitchen slicing and dicing and serving up healthy meals for my family.

Oven-Steamed Salmon with Sweet and Sour Pepper Sauce

Yields 4 servings

For the Salmon:
4 fresh salmon fillets, skin on (4 oz. each)
1/2 tsp. each kosher salt and black pepper

For the Pepper Sauce:
1/4 cup diced red onion
Pinch of red pepper flakes
2 tsp. olive oil
3 Tbsp. fresh lemon juice
2 Tbsp. sugar
1/3 cup jarred roasted red peppers, sliced into strips
3 Tbsp. slivered almonds

Place roasting pan half-filled with water inside oven.  Preheat oven to 325.  Coat a small wire rack with nonstick spray.

Arrange salmon, skin side down, on prepared rack; season with salt and pepper.  Set rack over water in pan, making sure water doesn't touch fish.  Oven-steam salmon until firm 10 - 15 minutes depending on thickness.

Saute onion and pepper flakes for the sauce in oil in a nonstick skillet over medium heat.  Cook until onion is slightly softened, about 3 minutes.  Whisk lemon juice and sugar together, add to onion, and simmer until syrupy, 2 minutes.

Stir in roasted peppers and almonds; simmer briefly.  Serve sauce over salmon.

  2. Hi Dee! Welcome back! Honestly this is my first time learning about "oven-steam" fish (you know I don't use oven as much as you do)! This is SUPER healthy! I love it. We sometimes get a big salmon from Costco and I don't know what to do with it. This recipe will be handy. Thank you and I keep this recipe in my folder now!

    This salmon looks AMAZING!! I think we should make something like this, but use wasabi in the mix as well... ;-)
