Breakfast of Champions


One of my favorite breakfasts is pancakes and bacon.  I love the way the bacon makes the house smell in the morning.  It reminds me of living back at home with my parents.  My mom made breakfast every weekend and she is still making breakfast.  She even makes it during the week now for my dad.  Hey, I'm feeling a little cheated considering I had cereal during the week before school ;)  I don't make breakfast every weekend.  Just because I'm a little lazy like that and I don't think my family would want a big breakfast every weekend anyway.  They were hungry this morning though and I had bacon thawed and I always have ingredients for pancakes.  Who doesn't? These pancakes are my favorite.  They are always sweet and fluffy and they are wonderful with fruit and powdered sugar.


Fluffy Pancakes

Yields 8 servings

1-1/2 cups milk
1/4 cup white vinegar
2 cups all-purpose flour
1/4 cup white sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 egg
1 tsp. vanilla
1/4 cup butter, melted
cooking spray

Combine milk with vinegar in a medium bowl and set aside for 5 minutes to "sour".

Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg, vanilla  and butter into "soured" milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.

Heat a large skillet over medium heat, and coat with cooking spray. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

  1. White vinegar in pancakes! I wonder what's the trick using the vinegar, or is this common ingredient for pancakes? Sorry I usually buy pancake mix (pick good one though)... =P Your pancakes look so delicious and fluffy!

  2. Hi Nami! When you mix white vinegar and milk and let it set, it turns into buttermilk! I never have buttermilk so I always use that trick. Thanks!

  8. Wow Dee.... thank you for the trick. I didn't know that! I'm always hesitant to buy those big buttermilk container but now I can cook buttermilk on my own! This is awesome tip (is it too elemental? haha).
