Snow, Snow and More Snow


Remember yesterday when I didn't want to get out of bed and open the blinds?  This morning my personal, handsome hunk of a barista a.k.a my hubby, brought me my morning coffee and opened the blinds.  I was met by HUGE white flakes heavily falling to the ground.  Alas my spring menu plans still prevailed (insert evil laugh).  Yes, I will overcome you Old Man Winter.  I will not hunker down with my tail between my legs.  I will trudge on through your snow and chilly winds and keep on keepin' on!  In fact, just to spite you, I brought out all of the fruit from my fridge and I created Fresh Fruit with Lime Gastrique.  How does that make you feel?


Fresh Fruit with Lime Gastrique

Yields 4 servings

2 Tbsp. fresh lime juice
1 Tbsp. sugar
1 cup sliced kiwi
1 cup sliced mango
1 cup sliced banana
1 cup sliced strawberries

Whisk together lime juice and sugar in a small bowl.


Combine kiwi, mango, banana, and strawberries in a large bowl.


Toss fruit with lime mixture; let stand 15 minutes before serving.


Per Serving: Calories 110; Total Fat 1g; Cholesterol 0mg; Sodium 3mg; Protein 1g

  1. Yummy! But honestly it really doesn't feel like spring ... it's pelting with rain outside yet again (at least you get to see pretty snowflakes)! Love your photos, your fresh fruit with lime looks simply deelicious!

    Love your fresh fruit it makes me think of spring and summer. We had crazy weather here too, two days ago snow, yesterday nice and sunny and snow again today, it's so annoying ;)I need sun!

  8. Lauren, this was so yummy :) It would be really good on top of an Angel Food Cake with some whipped cream. Although, then it would no longer be low calorie...eek!
