I know it's been a while since I have posted. I've been quite busy with Spring cleaning and working out at the Gym. Anyway, just last week I had a hankering for a Grilled Cheese at lunch. I also had a hankering for Sun-dried tomatoes and Pesto. So, I got creative and put a little something together, it goes like this:
Dee's Grilled Cheese
Ingredients:
2 slices of bread, buttered
Basil pesto
Julienned sun-dried tomatoes packed in olive oil
1/4 cup feta cheese
1 slice cheddar cheese
Directions:
Butter one slice of your bread and place it butter side down on the skillet or inside grill (cuz I like the cool grill marks!). Spread your pesto on the other side and sprinkle the Feta cheese carefully, place some sun-dried tomatoes on top and place your 1 slice of cheddar cheese on top of the tomatoes. Butter the other slice of bread and place it on top butter side up. Allow it to grill for about 2 or 3 minutes and flip it over, repeat.
Voila, perfection!
